Can anyone point me in the right direction to find some blank (i.e. engravable) medallions?

First, I don't know. Ajax offers medallions with their grips but it's not clear to me how they're mounted. Ruger medallions seem to have a small diameter round piece that protrudes through the grips and made be bradded from the back side. Somebody has to make these and would probably sell blank ones but I'm not sure they'd be made of a material suitable for engraving. Worst case, I'm sure a machine shop could do it but might be expensive.
If you were willing to trust epoxy for mounting, half inch stainless rod could be cut and polished, engaved and mounted...

He does good work, and I like the idea of getting something custom carved and fit to my frame, he'll be doing the Vaquero grips, he just doesn't know it yet, anyone have a copy of the 1980 Shooting Annual Skeeter Skelton on handguns? and a scanner, there's a picture of some carved ivories that belonged to skeeter on page 65 I'd like a digital copy of to send off to him for an estimate when I e-mail him about making the grips, they're the ones with the bull skull on them

Those look good Aggie, I want him to basically replicate Skeeter's grips (without his initials on the other side, mine please and thanks) for the Vaquero project in order of my rodeo retirement

I've gotten grips and medallions from klamath River and it's fantastic stuff. Originally was gonna use real case heads with bad primers but thought these up after seeing Brian did custom ones. top on matches the gun - stainless. he bottom obviously...brass.

I realized I forgot to state in my earlier post - You can get blank (or custom) medallions from him without buying grips. Call him.
