I have a couple of Bisleys and am thinking of having two pair of grips made from micarta and American Holly. Who would some of you recommend to have do the work?

Dustin Linebaugh does the finest Bisley grips out there bar none including Roy Fishpaw. His prices are reasonable but they do take a while for him to complete, figure on at least a year from the time of the order. But there are a lot of other guys out there as well, Blu Magnum, our own Sixshot from here on the forum.
What are you looking for, the best of the best or working gun grips?

Check with Dick Thompson Aka Sixshot aka The Meathammer.
He can fix you right up.
If you also want some tuning done to your sixgun Alan Harton makes really nice grips too.

Bisely: Real or Ruger? Private's Custom Grips is tooling up for bisleys, presumably Ruger, and he does good work.

I should have thought of Alan Harton making grips when he had the guns in his shop for trigger and other light work. Next time I'll know to ask him. He is such a craftsman, I know his grips must be really nice.

When you look over the options out there take note that the ones with seamless (perfect) fit will require that you send the grip frame for fitting.. The stainless Ruger grip frames have a reputation for lots of variation and some grip makers require the stainless grip frame to be sent to them. They can get close with blue guns and really look nice but the stuff you see on the hotdawg guns that look molded to the gun are fitted to the specific grip frame. I'm holding examples from Reeder, Clements, Bowen, Harton, and Gallagher that are exquisitely fitted. FWIW I just contacted Hamilton Bowen about retro fitting some micarta to one of his 500L Nimrods... Hamilton pointed me to Paul Persinger and that is where the grip frame will go..
