Some years ago I picked up a 357 with the conversion installed. Just recently picked up "most" of the parts from an OM that was chopped but pretty sure I got everything necessary to put it back to original. Is it just a matter of putting in the original parts or is there anything to be wary of?

Just put back the original parts. Old Models are super easy.

Likewise, to refit old model lockwork requires no modification. Remember, the old model is a five-shooter. It is carried with an empty chamber under the hammer. David Bradshaw

The ultimate negative on the TB conversions was a poor trigger pull and a big ol' drag line on the cylinder. I admire your desire to convert one back to a 5 shooter. Hopefully, your trigger pull will be nice.

As noted above,, the Ruger OM is a very easy to work on revolver. If you have a manual (a repro copy available from Ruger) it has invaluable info on the inner works & disassembly etc.

And done. Came apart and went together surprisingly easy once I got the cylinder latch spring oriented correctly. Trigger pull is about 1 lb 9 oz. I put the Belt Mountain pin back in just because.
