Have seen that referred to on a number of the outdoor Alaska type shows. Seems to be quite a thing. Am not sure of exactly which morsels they are going after. Nose, eyelids ? What ? Shave off everything possible and go the soup/stew route ? This similar to what some do with hog/swine/pig heads ?

Clean barbacoa is cheeks and tongue , "standard" barbacoa is everything , cheeks, tongue, gums...everything . Shred and place in fresh corn tortilla with green chili . Looks good !

Had it and Moose head Soup several times. Prefer the soup on a cold fall day.

Capi, ‘possum and monkey. All critters we hunted during the middle of the night with 16 gauge shotguns and flashlights out of canoes then wading up feeder streams while listening for tree dwellers or capis. Hear something and the flashlights go on and star searching for targets.

It’s meat, so I would give it a try. The average American is able to have prejudices over the foods they will eat due to their access to food.

We Italians eat Capuzzelle... roasted sheep head, why not moose? Saying Capuzzelle is enough of a tongue twister all by itself.
