I screwed up.....I thought I put this in the Lounge.
My brother and I made "Bambi bites" with whitetail for the longest time and now I use elk. The trick is to cut the meat in cubes about 1". Then wrap it in thin bacon once you marinated the meat. I've been using an old and ancient marinade recipe.....Italian dressing. The thin bacon is key. With the smoker at 350, once the bacon is ready the elk is done enough but not so done that it's dried out.

Looks very good ! Recall B-n-Law doing gator that way, in Fla.. Without a moments thought, Elk has to be better !

Those look great.
I wrap venison backstraps in bacon and throw them on the grill,,,,,,yum, yum.
