Dick.... beautiful animals, with tales to back them up, in fine territory. You are a rarity in claiming moose venison tastes better than elk. You have my agreement, although as you infer, animals vary. Time and condition are important. Aging really sweetens meat, with hanging so important. Ernest Hemingway reflects a widespread view in preferring elk to moose. Make mine RED, very rare. Red meat is meant to be eaten red. Deer, elk and moose take their flavor from the meat, whereas beef relies on fat for much of its flavor. David Bradshaw

Thanks for the more info on the elk & all. Plus,,, those mulies are excellent. Extra tags and available space to hunt them,,, it doesn't get much better. I have heard about moose meat & being selective in harvesting them. But my limited experience says the one's I've eaten were taken at the right time. If I had to choose,,, moose would be #1 over elk & mulie. Miss Penny favors the sage eating mulies & antelopes over the others. She really likes the natural sage flavor. But,, heck,, I like them ALL!!!!!! That big bull elk,,, it's hard to tell,,, but I'm guessing it'll score in the 365-370 range? ? And that 35" mulie,,, NICE!!!!! But that smiling picture of the kid with the 5x4 mulie is the best!

David, you are spot on about wild game, it has to be rare because you have to trim the fat, plus it's naturally lean. Over cook it & it is dry with very little taste but some rare/medium rare back straps that have aged for 6-8 days are hard to beat. Cut them thick, marinate if you like with some Italian dressing for a few hours & hit the grill but not for long! Get those dutch oven taters going with a Walla Walla sweet onion chopped, salt, pepper, Johnnys seasoning & a good biscuit & stand back or the kids will run over you. I've had some moose & elk that would rival beef for flavor but sometimes it needs to be marinated, just don't over cook it! If it's tough cube it or put it in the pressure cooker or "Croc" crock pot... with taters, carrots, onions, a stick of celery, a little beef bullion, a little garlic, little cumin, salt & pepper. It's amazing when you see a kid with a deer or a fish, you always see a smile, it's just automatic. That's why all of us should take a kid, any kid at least once a year hunting or fishing, that smile says it all! I don't think Callshot had smiled in years, too much pressure but when he shot that bull moose with his 41 magnum he was like a 6 year old at Christmas, priceless!

Ray, you can shoot 1/2 hour after sun down in Idaho & right now that's about 7pm here. For me with iron sights it's closer to 6:30 but I had the scoped 10 1/2" 44 in my pack as always so if everything was perfect (wasn't) tonight I could get pretty close to 7pm. I also had my AR 223 with me because I've been seeing coyotes. I started to leave about 6:30 & had only went about 100 yds & I could see 4 deer steep down hill below me. Hitting them with the glasses one looked like he could be a small buck but they were standing in a real dark spot looking up at me, they didn't want to run out into the open. It was already to late for the 41 magnum, I didn't even pull it but I still wasn't sure if the one was a buck, many times just the way a deer moves tells you it's a buck & that's what really had me going. The light was fading really fast even at about 60 yds & then they started moving away at a cautious walk. As they walked away their heads broke out of the dark spot & I did see small horns against the light colored grass but it was too late, then they were gone. We're talking maybe 5 minutes earlier if I had left I would have caught them almost the same elevation as me & a bit more daylight, it just didn't work out. I could have shot it with the AR but that wasn't ever an option. I've still got a Utah doe tag that I can fill pretty easy, just have to make the 2 hour drive, lots of deer & I saw 4 coyotes last trip. I'm not unhappy, saw probably 300 deer, got picky because of that big 4X4 & with a sixgun you don't get many chances.

I got my moose at 20 minutes to 6:00pm on Sept. 28th. I did have a good smile on after the shot, but can't tell you all what Dick said to coach the smile out of me! It was 11 years ago and was the best wild game meat that I have ever eaten. I was raised on deer. Elk is great. Moose was the bestπ. Having Dick with me on that trip was the best also! Amazing elk and deer. I've a lot of fun and filled the freezer pretty well with moose and bear, but I really do lust for a good elk/mulie hunt someday soon.
Impressive for sure.
