Considering what I have now and the custom I'm getting built, I think I'd have to go with a 97 45 Colt, short barrel, round butt, action job, maybe octagon and a fluted cylinder.
If (heaven forbid!) I knew it was the only revolver I was going to own I think it'd have to be a 83 475 premier 6" with a few goodies.

:-/Wow, you guys really took off on this question and I appreciate all the great input. What I’ve been thinking is Model 97 because I already have a SBH and a 41 Hunter for hunting purposes. I have a couple of 357s so that’s in the mix but I was kinda’ surprised more votes for a 44spl didn’t come back. My reading tells me it’s the holy grail of classic versatility and so many guys have gotten customs built in this caliber. I’ve wanting a fun, accurate plinker that’s packable enough to take on the 4 wheeler when I’m NOT hunting, but would be good medicine for a whitetail of opportunity. So I guess that puts me at either a 4.6 or 5.5” 357(convertible) or 44 spl or 45 colt.

I think the .44spl is the best option for what you want to do in the 97 because of the short cylinder and large bore.

I've been thinking about this but am years away from realizing this dream. Answering the questions of:
1. what are you going to use it for? 2. what caliber? 3. what size frame fits your hand and lifestyle the best?
...are all vitally important to finding your way on this path filled with lovely temptation. I'm a newbie to SAA handgunning, but have been leapfrogging into my own idiosyncratic niche of the SAA world.
I don't see myself hunting with a handgun or doing long range target shooting. I enjoy plinking and having a "walking in the woods' hand gun. I like bigger bores but am not a heavy recoil enthusiast. I got into .44 special and .44 magnum as variations on a caliber and have several Colt SAAs and a Smith DA, plus a Marlin 1894SS. I am intrigued by the graybeard mystique of .44 special as the consummate, acquired taste after a lifetime of trying out big bores. I like short barrels for their utility, for personal protection, and concealability. I believe that every gun needs a holster, so I've got someplace to put it when I'm not shooting it. My hand is not large, and I don't like a 50 oz. gun on my hip. I like the traditional look of a Colt SAA and don't like adjustable sights unless I'm building a combat pistol with night sights.
After doing this personal inventory, I'll probably want a model 97 FA in .44 special with a 4 inch barrel, black micarta round butt grips, fixed rear sight with minimal front sight (black with white insert).

Mine gets the same use you intend for yours. The 44 special has proven for me to be near perfect for white tails. Dan

Groo here First, what are the laws in the areas you hunt [ you said white tail if the shot was there] Then get a barrel that makes length.. For your first ,all the fluf and buff [ aka fancy stuff ] is not needed [ except if the price is right] I have two m83's, an early one in 454 with 7 1/2 in and a later one with a 4 3/4in, both shoot better than I do, but are the same size as a Blackhawk and heavy. If that works for you OK. The m-97 is different, Smaller [like a colt singleaction ] and lighter. A better packing gun. For me I would pick a cartridge that fits the frame and game,, I would not pick a 357 , or 45 colt as they can be had in small frame rugers, Instead If you do not reload [ you will start ] the 41 mag , lots of punch in a small package.. If you reload the 44 spec as the 5 shot will allow you to get best power from the round. Adj sights and the top of the line if ordering.. All will shoot better than you do for a ling time and will usually cause the others in your collection to collect dust.

5 1/2" M97 w/Oct bbl and black micartas (.357 Mag or .22/.22 mag -- can't remember they are identical). Shown with Rick Gittlein carved model 120 from Rob at Simply Rugged. . . 4 1/4" 45 Colt M97 w/Oct bbl, .45 ACP aux cyl, and black micartas (If I could have only one handgun, it would most likely be this one) . . 3 1/2" Round Butt 45 Colt M97 w/fulted cylinder and black micartas . . The 3 1/2" belly gun shown with a 5 1/2" M97 .44 Special . . The 3 1/2" belly gun gun shown with a S&W 3" L Frame Ti Mtn Lite (386) . . A 6" FA .475 Linebaugh, the 4 1/4" .45 Colt, Oct bbl, and a S&W 329 4" .44 Mag . . The 3 1/2" belly gun with a 2x Leupold -- was testing loads, but this would be a viable hunting setup. . . Just a few variations -- Axe and Ken O'Neill are in a better position to show other variations. I like the M97 better for a packing, plinking gun. Paul

As always, very well and most tastefully done Paul.
One could get by just fine with a 44 special 97FA. The 45 however, allows for the addition of the ACP cylinder.
For one gun, I still say a 5.5" barrel is the best option. Since you will only have one, get an octagon.
