The wife just made the winters first batch of Chili. This likely varies more by region and personal taste than BBQ does. Certainally what my Wife throws in the pot differs from mine greatly. So to start, I want MEAT. Beef or Venison. Lately I've tried porcupine, it has serious chili creds now. Wife goes heavy on beans, several kinds, ends up thicker than mine. I like more peppers and tomatoes, fresh chopped, less canned anything possible. So, officially now, it is Chili Season ! Let the mayhem and gas begin. Burp.

Ok, Wife threw me a curve. She added a handful or two of sweet corn, from bag, frozen type. I LIKE it. Often add handful to her home made soups, so she took the hint. Yum.

Real chili doesn’t have beans in it. You can eat it with beans but it’s an all meat thing. At least that’s what they tell you in Texas.

Here in central Fla we hit chili season when night time temps hit the 70 degree mark.

In my part of the country there ain't no 'chili season'. Most of the old time 'greasy spoons' serve it 3 times a day, 7 days a week, year 'round. NO BEANS!

If I’m making chili for a beef frank then it’s no beans.
If I’m doing the day long crock pot on a rainy Saturday with intentions of garnishing a full bowl of the stuff with cheese, sour cream, diced red onions, then I add the magical fruit.

No Beans!!! That’s funny. Chili is derived from the Mexican “Chili con carne”. Which means Chili with meat. So if it’s with meat then that means something else makes up the actual Chili and the meat is added.
My Texas family background is Mexican/Apache, and my great grandmothers recipe always had beans in it,.........just sayin’, Chili with no beans, now that’s funny.

we eat chili year round here. though not as often in the summer. beans or no beans it doesn't matter to me.
now I had a Yankee's rabbit chili once at the Ruger forum shoot and added corn to it. it tasted alright but I was sure glad none of my Texas friends saw me eating it.

Sounds to me like some people just ain't never had no proper beans....Of course, you gotta be qualified to make proper beans....
My wife made some Chili this week. It was honestly a bit of a "hurry up" recipe with some can ingredients. It was dang good though. Not much left.

If we are going to language origin ... chili con carne = chili with meat Chili is a pepper, red or green. Peppers with meat. Beans are frijoles.

All the chili I get around here has beans in it. A bowl full generates enough gas to drive to Idaho. Maybe good, maybe bad, but that's just the way it is. I will say that my wife also began adding corn about a year ago, and the result is great!

Right or wrong,when I think of chili I'm thinking cowboys at the back of the chuckwagon stuff. Maybe more correctly called beef'n'beans ? Meat and beans together with lots of chopped tomatoe, onions, and peppers. Liberal with more than one heat source. Wife can't eat it. The proper bean thing, believe your right, but only know the from can beans around here. Kinda sad, huh ? Wife an amazing cook but hasn't gone there yet and no recollection of my Mom doing real beans either. No doubt she did when young, her side of family had big gardens and a farm. Guess she embraced the "modern" stuff when she could.

wife is working on her 3rd huge pot so far this year... she makes a good average chili... then I add triple apple wood smoked ground ghost peppers to get my forehead to sweat... now that is chili
