You'll thank me later. Use chip chop ham and BBQ sauce in a slow cooker, Croc Pot, to create a burger or hot dog topping. If your from W.Va., add cole slaw on top. Those folks ain't right, but what ever. You can just use the chip chop on buns or bread. Enjoy, burp...

Never heard of this here "Chip Chop" ham? Probably because it wouldn't be good nuff for the Yuppie folk round these parts!!

It is actually a process of shaving the meat on the thinnest setting your butcher has. It was originally used to make less expensive pressed hams more tasty. It works with all ham and is the only way we have ever gotten it since I was a kid. If you have a favorite ham try it sliced paper thin or "chipped" since it produces a almost shredded effect. Frying it is also great....
Definitely a Western Pa thing...and Ashtsbula county Ohio apparently!

Back when I still lived in Pittsburgh (pre-mid '69), it was simply called "chipped ham". And yep, Isaly's was the place to get it! I wish I had some now.... chipped ham sandwiches are the cat's meow.

Yup, Isaly's ! I didn't specify since I haven't seen one for years. Used to be one at the top of our street, walked there for ice cream on hot days. Think they are still in business in a limited manner yet.

IF if if..contract goes well, heck if ok.. Have 3rd full week of July off for the normal summer plant shutdown still scheduled. Some camp time likely. If if if..I'll bring a croc-Pot of BBQ Chip-Chop, and buns. Also will bring 480,ATV,meat for grill, and beer. Gotta catch your own rattlesnakes, and there is a bounty on red squirrels, sorta. May bring brand new DA if if if.. My life in limbo now. Contract talks into 3rd or 4th week. Extension to run out soon, yet working OT.. Life seems to be like a Twilight Zone episode lately.

Trying it out tomorrow thanks to this thread! Since we have soo many birthdays this month, we're having a big family get together/BBQ/Swim here at the house to knock 'em all out at once. I'll let ya know how it goes.
