I've got two 14.8 cu. ft. chest freezers, one I use for the half a beef and deer meat, the other has a hog and store bought items. I went with two, cause the more stuff you keep in a freezer the less it works, so all else fails when they both get down half way I can put everything into one, and that's the time I pitch old stuff, or stuff we don't use. (come to think of it I need to be doing that)
I like the idea of a clip board with a list of items, good idea!
One thing I do is date everything I put in there, that way I can use the old first. That come from working in a locker for 7 years.
I have been keeping my eyes open for an upright freezer, they would be good for day to day items, short term keeping, or to freeze fresh items before the go in the chest freezer.

I would certainly agree that if possible go one size bigger than you decide one. We are strangely situated in that we do not buy meat in years that we get moose. We have two stand-up freezers. Non idea what cuft they are--although I should. Both are about 6'+ tall, one about 3 years old, the other about 20 years old. Most years the older freezer is emptied and unplugged a couple months before the salmon show up and we restart the cycle. This time of year, ignoring the bulk items--veggies and such--from Costco, we have several hundred pounds of moose, caribou, blacktail, another few hundred pounds of halibut and salmon, upwards of hundred+ pounds of spot prawns and crab. All hunted and gathered. Luckily, wife's family raises chickens and pig, so we barter for some fresh pork as well.
Usually, by the time we horse trade and send outside family a few boxes of seafood at Christmas we can combine the two freezers. Usually depends on amount of crab we have. It doesn't weigh much, but it certainly takes up a lot of freezer space per pound.

This is our newer of two freezers, and think the stand-ups make finding goodies a bit easier.
