I have seen the liver come outta a bear and go right into a sink for rinsing, then cut into strips and dropped in a cast iron skillet with half a stick of butter and a whole onion. A bunch of eggs got scrambled in the other skillet. Together they made quite a breakfast in northern Ont. years ago. Only liver that ever made it past my lips. Gotta believe bear ribs should BBQ up right nicely.

We cook the roasts in a crockpot just like any beef or venison. If you suspect they're a little tough, add about 1/2 cup of apple cider vinegar to your crockpot recipe. The backstraps grill or fry nicely for some excellent steaks.
We've used the ground meat for spaghetti, tacos, etc.
The bears feeding on berries are most excellent:)
Good luck on your hunt!

Got back last night at midnight! Had a great time with 5 days of rain and cold. The three of us saw a total of 5 bears and my buddy shot a small one. My son took the meat home but we ate the tenderloin that night and it was delicious. Fried in a little butter and onion! A great meal at 11:00 at night!
