With a pre-emptive strike of TUMS, I'd go for 2nds.. The knife blade looks like a cross between a Sykes-Fairborn and a Gerber MK2. I like it.

Pit Boss pellet grill 1:3 salt to pepper rub 200 degree smoke until bark looks "right" or until internal temp reaches 165 raise grill temp to 250 degrees, butcher paper wrap until tender(205-210 degree internal temp)
