I've never butchered one, so I'm not sure the bones you're talking about... almost look like rib bones in the picture...

think you can eat darn near anything if you make bacon or sausage out of it... MRS. loves Duck Dynasty... ( I could take it or leave it, & usually find something else to do when it's on )... but watched one a while back, where they were killing musk rats ( didn't call them that, so it may have been some other rodent ) but they took them to a sausage maker & had sausage made... tried lots of wild game in my life, but never had musk rat yet

I'd best add a warning though. A fair bit of rabies being carried by our local raccoons. I've shot 2 mid day, wobbling like they were drunk, not responding to yells or thrown stuff, over the past 5-10yrs. They can also carry leptospirosis, which you can catch from handling them, can cause high fever, flu-like symptoms, and in bad cases kidney and liver failure.
