Went back & re-read my reply & had to chuckle. I was referring to moose but talking deer fat at the same time, no comparison!! Moose fat is just fine but you do want to trim venison fat, that's what I meant to say. Some of our later season moose have a fair bit of fat on them, our early season moose do not! I still have some canned moose I made that is great once you warm it up, add a little mayo & slap it on some homemade sour dough bread, yummy.

Sitting here now with a belly full of moose burger. nuthin but moose in my burger! Oh, one exception. I found that Dall Sheep goes good with moose! Dall Sheep is high in fat, the meat is marbled with fat like beef. Sheep burger is pretty fatty. 50/50 Sheep and Moose equals Shmoose Burger! No added moose fat, the Sheep has plenty. Makes a nice blend. So, JM.... Moose also goes well with Sheep! Shmoose Burger!

Mmmmmmmoose/sheep/caribou sausage meat loaf...with roasted garlic mashed homestead grown potatoes. Makes my mouth water!

I was privileged to receive some Alaskan moose meat several years ago from a friend. It was GREAT! He gave me about 20 lbs,, so I was able to try steaks, stew & burger. (He had already had it processed.) I've killed a few elk,, and many deer. But Miss Penny says she prefers the sage eating mule deer above all others. She loved the one I took in Colorado.

Snyd, Your moose up there must be fatter than the ones in my area. The last two cows my wife and I killed were pretty short on fat. Both were healthy big cows but almost no fat. Mart huh.... I think over the years we may have gotten one or two that didn't seem to have much fat but usually they're pretty good. I wonder if Moose north of the AK Range here carry more fat. I have no clue really.

Makin' me hungry. Never had moose, but I'm an adventurous eater & always looking to try new things. Had elk burgers before, but never a chance for moose.

The best there is! Best meat I've eaten. Nothing better. My only trouble is that I couldn't eat it fast enough. Had a little freezer burn after a while. Best hunt was to kill it with Dick Thompson watching and to take the pictures. Definitely better than squirrel.

Was also one of the better handgun kills I've witnessed, he had to thread the needle because it was a very narrow window for that 225 gr 41 magnum bullet to slip through to reach that bull. Steve pulled it off & the bull was dead by the time we walked up to him. I think the shot was something like 63 yds or so, can't remember but the bull was facing us straight on & placement had to be perfect & it was.

Dick Well, I would expect any sharpshootin' glass eyed Idaho hill country boy to be a dead eye just like that and then some. Why I hear some of them mountain feller's can stand on one leg and one stump and off hand shoot ground hogs near onto 200 yards or so give or take a first down or two... Of course, If I had to bet, ole Steve was probably shooting one of Sixshots loads and what really happened here was that bull seen Callshot the sharpshooter drawin' a bead on his bones and just knew his time was up and plumb died of fright. Dick and Steve probably had to walk pretty slow not to overtake that 41 on the way over to that dead moose.....It's probably somewhere over Alberta about now....
